This ultimate salad, is the perfect option to cook quickly and healthy.

What do we need ?

Raw Organic Zucchinis (preferably organic, as we will use with skin), cherry tomatoes and fresh Basil leaves.

The only thing to consider with this salad is how to cut the zucchinis.

I found out that the best and more appetizing way to consume raw zucchini is to finely chop them, here my suggestions :

  1. In spirals , like spaghetti or fettuccine
  2. with a mandolin in fine slices
  3. with a grater
  4. In small Cubes


The presentation of zucchini in spirals or fettuccine makes them a perfect substitute for traditional wheat-based pasta.

Ingredients
  

  • 2 Raw Organic Zucchinis
  • 1 cup Cherry tomatoes half chopped
  • Basil leaves roughly chopped

Dressing

  • 1 Lemon
  • Olive oil as desire
  • Salt and pepper to taste

Instructions
 

  • Finely chopped the zucchinis (spirals, slices or small cubes)
  • Mix the Zucchinis with the tomatoes

Dressing

  • Mix the lemon juice, olive oil as desired, salt and pepper to taste
  • Add the dressing to the zucchinis and tomatoes. Then add the basil leaves. combine all the ingredients very well.
