It can be prepared from vegetables, fruits or a mixture of fruits. Such as the red fruit coulis where strawberries, blueberries, and raspberries are mixed.
The term Coulis is a French word pronounced /culi/ derived from the french verb couler , which means ” to Run” referring to a liquid.
For the preparation, you will need fresh or frozen fruits, sugar, the juice of half a lemon, and a little water.
Place all the ingredients in a pot at low heat for a few minutes. until the fruits become soft and begin to fall apart.
Remove from the heat and with a stand mixer, crushed until obtaining a puree. Strain to have a smooth sauce.
Refrigerate and allow to cool completely. As the sauce cools it will thicken.
you can add some drops of vanilla or add a vanilla pod while you cook the fruit.
If you want a more rustic preparation with pieces of fruit, after crushing the fruit, do not pass the sauce through the strainer.
