Not Getting enough healthy green and vegetables in our diet can be a common issue, sometimes because we don’t know how to include them in our meals or just because we prepare all the time the same recipes all with the same ingredients. That means, we can have a deficiency of certain nutrients and I am sure that those ingredients that you are avoiding or eating less are the Nourishing Greens as I call them (leafy greens, green beans, fresh broccoli, green bell pepper, edamame, etc).

Looking for inspiration to prepare something fun and tasty, I decided to look into Filipino food, their food is a mix of sweet, and savory and prepared with ingredients that are more or less easy to find, they include a lot of vegetables, and generally are not spicy, so no worries!.

This original recipe in Philippines is called ginisang, they have many ways to do it, including chicken, pork, pumpkin, etc. I’m not preparing exactly as they do but I took inspiration from it to create my own version. I chose the family’s favorite greens to prepare and firm tofu as a protein source (see image above). So you can also personalize yours, remember this is home-cooking and think about the people that are going to eat it at home, hubby, kids, friends, and you, and also the local food available in your place.!

Something that I really like in this recipe is that you do most of the cooking in one pan, this help also to integrate all the flavors (image below) and clean the kitchen faster.

Ingredients
  

  • 500 gr Firm Tofu
  • 200 gr Baby corn
  • 140 gr Sweet Pea
  • 1 Bunch of spring Onion (chopped)
  • 1 Head of Broccoli
  • 3 Garlic cloves
  • 1 -2 Shallots
  • 2 tbsp Oyster Sauce
  • Salt
  • Coconut Oil (to fry the tofu and sateé de vegetables)
  • 1 tbsp corn starch

Instructions
 

  • Heat a pan, add coconut oil, shallots, and garlic stir for 1 – 2 minutes, then add the sweet peas and chopped baby corn. Season with salt and black pepper. Cook until the veggies feel tender when introduce a knife but still a bit crunchy.
  • Add broccoli, chopped spring onion, and oyster sauce, mix well , and cook at low-medium heat for a few minutes covering the pan with a lid.
  • In a small bowl combine cornstarch and approximately 50 ml of water, mix well, and add this to the pan with the vegetables. This will help to give consistency to the sauce.
  • In a separate pan, add coconut oil and fry the tofu for each side, season with salt and black pepper. When the tofu is golden brown remove it from the pan, dice, and reserve.
  • To serve, transfer the sauteéd vegetables to a big plate and add fried tofu on top mix well and enjoy as a main dish or as a side dish with steamed rice.
