This Cucumber, Feta, and za’atar salad is an example of how changing the way we used to cut the vegetables at home, can create a more appealing and interesting result, not only for adults but also for kids.

To cut the cucumber in spirals we used a spiralizer, however it looks beautiful too when the cucumber is cut in rounded slices. To include an extra layer of texture to the salad we added pine nuts but they can also be omitted or replaced with your favorite nut (walnut, macadamia, cashew).

As we use only a few ingredients try to use good quality products that will apport nutrients to your body. try to buy organic cucumbers as we won’t peel off the skin.

I hope you will enjoy this curly salad as much as we do, by the way, this cucumber, feta, and za’atar salad for playdates or when there are kids coming home for lunch or dinner, and in this case, be aware of kids allergies to nuts (don’t add nuts) and don’t add too much Za’atar if the kids are not used to it.

As a dressing, we will use extra virgin olive oil that will be drizzled over the feta.

Ingredients
  

  • 6 Cucumbers with skin spiralized
  • 200 gr Feta Cheese
  • ½ cups Pomegranate Seeds
  • 4 tbsp Za'atar (to your taste)
  • Olive Oil extra virgin (to your taste)
  • Pine Nuts optional

Instructions
 

  • Wash, dry and spiralize the cucumbers
  • with your fingers or using a fork break the feta cheese, creating crumbs.
  • In a big plate, place a layer of spirelized cucumber, add a layer of feta crumbs, drizzle with olive oil , add 2 tbsp of za'atar , mix well all the ingredients.
  • add the remaining ingredients as topping for the salad, another layer of feta cheese, drizzle with more olive oil, add za'atar, pine nuts and the pomegranate seeds.
  • Keep in the fridge until the moment to serve.
