If there is something that I love more than chocolate is to tweak classic recipes and adjust them
to my own taste, my culinary preferences, or simply to the available things on my pantry.
Today We will prepare a Celery, Nuts, and Apples Salad that is basically a Classic Waldorf Salad
with a Twist because we won't include Any mayonnaise to make an Egg-Free Version and we will
use Lactose-free Cream, to give the creamy taste.

Do you know the origin of  Waldorf salad?

According to Wikipedia, Waldorf salad is named for the Waldorf-Astoria hotel in New York City, where it was first created for a charity ball given in honor of the St. Mary’s Hospital for Children on March 14, 1896.

The Waldorf-Astoria’s maître d’hôtel, Oscar Tschirky, developed is widely credited with creating the salad recipe. In 1896, the salad appeared in The Cook Book by “Oscar of the Waldorf”.

Something that I am sure you will love is the versatility to transform a simple salad into a complete meal just adding a protein like shredded Chicken breast or cubes of Turkey and extra flavor with dried fruits like cranberry, raisins, dates.

Ingredients
  

  • 1 Whole Celery 
  • 2 GreenApples
  • 1 cup Walnuts (roughly chopped)

Creamy Dressing

  • ½ cup Lactose- Free Cream
  • 2 tsp Dijon Mustard
  • 1 pinch Himalayan Salt
  • 1 pinch Freshly Ground black pepper

Instructions
 

  • Wash the Celery and apples
  • Finely chop the celery in slices and chop the green apple in squares.
  • In a bowl mix the chopped celery, green apples, and walnuts
  • Prepare the dressing mix the lactose-free cream, Dijon mustard, salt, and black pepper, taste and adjust Salt and pepper.
  • Note: to prevent brownish on the green apples, add a few drops of lemon after cutting them. You can prepare the salad a few hours in advance and keep it on the fridge covered with cling film to avoid the cream becoming dry.
