The macaroons are sweetened with Monk Fruit a low-calorie sweetener extracted from a fruit
that is native to China and Thailand.

Ingredients
  

  • 3 Egg Whites
  • 2 tsp Corn starch
  • 50 gr Monk Fruit sweetener (1/2 cup)
  • 140 gr Desiccated Coconut (1- ½ cups)

Instructions
 

  • Preheat oven at 160deg°C , prepare a baking tray with parchment paper.
  • Whisk the egg whites, at medium-high speed with an electric mixer, until the egg whites have a foamy but not stiff texture.
  • Add monk fruit , whisk until the sweetener is incorporated, add the desiccated coconut. Finish the process mixing, with folding movements to incorporate the coconut using a spatula .
  • Create small dollops or clouds using a spoon and proceed to bake in the preheated oven a 160deg°C, for 12- 15 min. Until golden on the outside. Let it cool on the baking tray.
