Preheat Oven 200degC (fan)
Prepare the rice following the package instructions.
Wash and dry the lettuce leaves. reserve
For the teriyaki sauce place the maple syrup, soy sauce, grated ginger, and rice vinegar in a saucepan and simmer a low heat for around 5 minutes without the lid. Reserve
In a preheated pan fry seal the salmon fillets, start cooking the salmon on the skin side when you notice the color of the salmon start to change (cook) flip on the other side (don’t fully cook, the inner part of the salmon must be a little bit undercook.
Finish cooking the fish in the oven. Place the salmon in the oven-proof dish skin down, add a little bit of the teriyaki sauce on top of the salmon. Cook for another 2 - 5 minutes. we want a flaky salmon. Don’t overcook.
To serve fill the lettuce with a little bit of cooked Rice, salmon add more teriyaki sauce, a few spring onions, and parsley leaves as a topping. Enjoy
