The easiest and most delicious way to enjoy a flaky salmon at home and make the kids enjoy with a fun presentation that will make them eat all the greens without even noticing.
This recipe is also great as a starter to share small bites rich on Omega 3 fatty Acids.

Salmon Teriyaki and Rice

Ingredients
  

  • 800 gr Salmon fillets with skin (approx. 200 gr. per person)
  • 5 Baby Gem lettuces (small Heads)
  • 2 cups Cups of Basmati Rice 
  • ½ cup Spring Onions finely sliced 
  • Few leaves of parsley (optional)

Teriyaki Sauce 

  • ½ cup Agave Syrup
  • ½ cup Soy sauce glutenfree
  • 1 tbsp Finely grated ginger
  • 1 tsp Garlic paste
  • 2 tbsp Rice Vinegar

Instructions
 

  • Preheat Oven 200degC (fan)
  • Prepare the rice following the package instructions.
  • Wash and dry the lettuce leaves. reserve
  • For the teriyaki sauce place the maple syrup, soy sauce, grated ginger, and rice vinegar in a saucepan and simmer a low heat for around 5 minutes without the lid. Reserve
  • In a preheated pan fry seal the salmon fillets, start cooking the salmon on the skin side when you notice the color of the salmon start to change (cook) flip on the other side (don’t fully cook, the inner part of the salmon must be a little bit undercook.
  • Finish cooking the fish in the oven. Place the salmon in the oven-proof dish skin down, add a little bit of the teriyaki sauce on top of the salmon. Cook for another 2 - 5 minutes. we want a flaky salmon. Don’t overcook.
  • To serve fill the lettuce with a little bit of cooked Rice, salmon add more teriyaki sauce, a few spring onions, and parsley leaves as a topping.  Enjoy
