If the dates are dry, add hot water and let them hydrate for 15 minutes approx until soften. If you have fresh dates proceed to place them in a food processor and start to blend.
The water needs to be added only if it is required, it means it the dates are little harder to reduce to a paste, or you want a more smooth texture, start slowly with few spoons or water.
After a few minutes when the dates are reduced to a paste, add the lemon zest. quick mix and the date paste is ready to be stored or consume inmediately.
It can be stored in food bags in the freezer or in sterilized glass pots to consume in the following days.
