Fish Fillet with Coconut Milk, curry  and Lemongrass

Every recipe has a story, this recipe is connected to my Caribbean roots and influenced by my years living in Dubai and my dietary restrictions. In Colombia- South America we used to eat fish either fried or cooked with coconut milk, tomatoes, and onions, (No spices), paired with a bowl of coconut rice, plantain, and fresh salad.

I mentioned all that to let you know that you can twist the recipes to your needs, asking yourself a few questions.

What are your nutritional requirements, and food restrictions, if any ?

When I create this recipe, I was following an AIP diet that is quite restrictive, I honestly didn’t know what to eat, so I started to think what are the flavors that I like, and what I’m allowed to eat following an AIP protocol. ( )

What are the Flavors, and textures, that you love ?

In my case, I thought about how much I like the creaminess of coconut milk and the taste of it mixed with curry. (at this moment I was already aware of my dietary restrictions “lactose intolerance” because of that the Coconut milk was my choice)

Who will eat the Food ?

As a family with kids, we know that kids struggle with the fish bones which means my best choice is the fish fillet (no bones, no skin). In fact, the kids are quite happy when they know that I prepare this recipe because they enjoy it.

What kind of fish to choose for the recipe ?

 I like to buy local as much as possible to support local businesses and also because the food is produced in place, which means freshness. I visited the local Fish market early morning and found the local Hammour fish as the most suitable option and local leafy greens (spinach and bok choy). Check what are the options in your local market, pantry, or nearest food market.

At the end with all that answers, I had a recipe that will satisfy all my family members, our food requirements, nutrients and was easy for me to prepare.

Fish Fillet with Coconut Milk and Lemongrass

Ingredients
  

  • 2 Fillet of Hammour (white Fish)
  • 400 ml Coconut Milk
  • 3 tbs Grated Fresh Ginger (fresh)
  • 3 tbs Curry powder (mild)
  • 5 Whole Black Pepper or fresh ground
  • 2 tbs Lemongrass paste or fresh lemongrass branch
  • salt to taste
  • 1 cup Basmati Rice

Instructions
 

  • Clean the fish, remove skin and bones,.cut in pieces approx. 3 cm thick. Add salt
  • In an ovenproof dish place the pieces of Hammour, add curry, lemongrass paste, grated ginger, black pepper, and coconut milk, mix. Flip the pieces of fish so both sides are covered with spices, lemongrass, and milk.
  • Add bok choy and spinach leaves. Cover with aluminum foil and bake in a pre-heated oven at 180deg°C, 45 min. Oven option Top-Bottom, Fan.
  • Prepare the rice as package instructions while the fish is in the oven.
  • After 45 minutes, carefully remove from Oven, check that fish is completely cooked, keep it covered with the aluminum foil until is served to keep it warm.
