Every recipe has a story, this recipe is connected to my Caribbean roots and influenced by my years living in Dubai and my dietary restrictions. In Colombia- South America we used to eat fish either fried or cooked with coconut milk, tomatoes, and onions, (No spices), paired with a bowl of coconut rice, plantain, and fresh salad.
I mentioned all that to let you know that you can twist the recipes to your needs, asking yourself a few questions.
In order to adapt a recipe to your taste, you need to connect with yourself, I will guide you with the question and I will share my answers, but you need to figure out what will be yours!
Let’s start the exercise with today’s recipe: Hammour Fish Fillet with coconut milk, curry, and fresh lemongrass.
When I create this recipe, I was following an AIP diet that is quite restrictive, I honestly didn’t know what to eat, so I started to think what are the flavors that I like, and what I’m allowed to eat following an AIP protocol. ( )
In my case, I thought about how much I like the creaminess of coconut milk and the taste of it mixed with curry. (at this moment I was already aware of my dietary restrictions “lactose intolerance” because of that the Coconut milk was my choice)
As a family with kids, we know that kids struggle with the fish bones which means my best choice is the fish fillet (no bones, no skin). In fact, the kids are quite happy when they know that I prepare this recipe because they enjoy it.
I like to buy local as much as possible to support local businesses and also because the food is produced in place, which means freshness. I visited the local Fish market early morning and found the local Hammour fish as the most suitable option and local leafy greens (spinach and bok choy). Check what are the options in your local market, pantry, or nearest food market.
At the end with all that answers, I had a recipe that will satisfy all my family members, our food requirements, nutrients and was easy for me to prepare.
