Caribbean Codfish Fritters is a traditional recipe from the French Antilles (Guadeloupe, Haiti,
Martinique). Prepared with cured codfish (salted and dried), spices, and herbs. Today we'll do
our Cod Fish Fritter with a twist using Fresh cod and making it Gluten Free. And we'll finish with a
Fun presentation that kids enjoy bite after bite.!
Cod fish fritters free from gluten

Ingredients
  

  • 350 gr Fresh Cod Fish shredded
  • 200 gr Gluten Free Flour
  • 80 gr Bell Pepper
  • 80 gr Red Onion
  • ½ tsp Baking Powder
  • 2 Eggs or use Egg replacer @bobredmill to replace 2 whole eggs
  • 1 cup water (as needed)
  • salt pinch
  • fresh ground black pepper (to taste)

Cucumber vinaigrette

  • 2 cucumbers diced
  • ¼ cup onion finely chopped
  • cup white vinegar
  • salt & pepper to taste

Instructions
 

  • Star Mixing all the dry ingredients. Shredded fish, bell peppers, onion, flour and salt and pepper.
  • Proceed to add the wet ingredients: the egg replacer or the whole eggs. add the water in small amount and check the consistency, if you need more or less water is ok. we look for a dense mixture. Not too liquid. (check this recipe video on YouTube).
  • In a Preheated pan-fry with Oil, place an amount of the codfish mixture and start to fry it until golden brown. place the fried Codfish fritters on kitchen paper, to absorb any excess of oil.

Cucumber Vinaigrette

  • Mix all the ingredients, taste, adjust salt. Serve next to the Cod fish fritters.

As Meal : Serve with Jazmin rice as side dish, extra cucumber slices and the cucumber vinaigrette.
