Today’s inspiration..! French Cuisine. A simple tomato and mustard tart.
A few years ago, I discovered in France savory tart “Tarte à la tomate”. I fell in love with it.
The French tart is basically made with red tomatoes, Dijon mustard, and fresh herbs. The base is
the classic Pâte Brisée.

If the Pâte Brisée is golden brown and the tomatoes need extra time to be cook, cover the tart with tin foil until ready.
 
 Eat cold or hot. It paired perfectly with salmon or leafy green salad.

Equipment

  • oven, round tart mold 28 cm

Ingredients
  

  • 1 roll Pâte Brisée  31 cm diameter
  • 5 Ripe tomatoes
  • 1 Onion
  • ½ cup grated comté cheese 
  • ½ cup grated Emmental cheese
  • Dijon mustard enough to cover the bottom of the tart
  • olive oil drizzle
  • salt pinch
  • Black pepper to your taste
  • Fresh Thyme to your taste

Instructions
 

  •  Pre heat the oven at 180 degC. 
  •  Unroll the Pâte Brisée on the mold and perforate the bottom with a fork.
  • Cover the bottom with Dijon mustard
  • Add the grated cheese 
  • Add a first layer of tomato, add the onion rings. Finally add a second layer of tomato slices, covering the onion rings. 
  •  Drizzle with olive oil, add a pinch of salt and black pepper
  • Sprinkle with fresh thyme.
  • Bake for 20 - 30 min @ 180 degC. Until the Pâte Brisée is golden brown and the tomatoes are cook.
  • If the Pâte Brisée is golden brown and the tomatoes need extra time to be cooke, cover the tart with tin foil until ready.
